Sonomic Red, made with Cabernet grapes, has the rich, intense flavors of deep, dark fruit and the consistency of an aged balsamic. Sonomic Gold, made with Muscat grapes, has a rich golden color and flavors of honey and apricot.

“They’re almost like a reduction,” according to Caryn Reading, who owns the company with her husband, Bill Reading. The lower acid provides a delicious alternative to vinegar.
It doesn’t take much Sonomic to dress up a salad or vegetables, or to finish grilled meat or fish. Sonomic is a great cocktail ingredient, and it turns fruit and ice cream into impressive desserts. Paired with cheese, Sonomic makes a delicious hors d’oeuvre. “You’re only limited by your imagination,” says Reading.

Sonomic Almost Vinegar is made by Sonoma Portworks. Sonoma Portworks is the only winery in Sonoma County specializing in ports and after-dinner wines. Sonoma Portworks has a tasting room in Petaluma, CA.

“Bill is in charge of production, and he likes the opportunity to be creative. When he decided to make wine, he didn’t want to do yet another chardonnay or zinfandel. So he has specialized in ports, and now our almost-vinegars. I am the ‘official’ taster. I love to cook, talk about food, and think about flavor. I enjoy talking to people in our tasting room,” says Caryn.

“Our slogan is ‘You’ve never tasted anything like this,‘ because when people taste Sonomic Almost Vinegar, that’s what they say. Then they say they love it, and then they ask how they can use it. I only need to give them an idea or two, and they’re off and running with ways to use Sonomic. That’s a conversation I really enjoy having!”

A lot of people who start out selling wine end up making wine, but Bill Reading made an imaginative choice and is making port – plus a unique product that he and Caryn (his wife and business partner) call Sonomic Almost Vinegar.

Back when pairing Cabernet with chocolate became popular, a friend told Bill that he had been trying to come up with a wine that had chocolate in it. All his attempts had failed, and he was giving up. Bill asked if his friend would mind if he gave it a try.

Bill and Caryn had many chocolate extracts and all-natural essences made for them, but after a year of smelling and tasting and working on the combination, they came to the same conclusion. Paired, Cabernet and chocolate were wonderful, but combined, not so much. Another serendipitous event changed their path.

A friend added one of their chocolate essences to a glass of port, and he was so excited about the taste, that he immediately called Bill up and told him he had to try it. The first Sonoma Portworks product was born: Deco Port with Dark Chocolate Essence.

“Bill got the bug,” Caryn says with the laugh. The couple began experimenting with other flavor combinations, such as Sherry with Hazelnuts.

“Bill decided he wanted to make his own port. We moved to Petaluma and began to buy grapes from a vineyard where they were growing them to fit with our flavor profiles.”

More experimenting, and another new product began to emerge: Sonomic Almost Vinegar. “We played with it a long time,” Caryn says. “We wanted a certain flavor and mouth feel. It had to be consistent. We had to figure out how to scale production. But the most fun was getting as many people as possible to try it.”

The Sonomic Red, made with Cabernet grapes, has the rich, intense flavors of deep, dark fruit and the consistency of an aged balsamic. “It’s almost like a reduction,” describes Caryn. Its lower acid provides a delicious alternative to vinegar.

Their second product was Sonomic Gold. “The muscat grape has such wonderful flavor and intensity. It took a long time to develop the Sonomic Gold, but the rich golden color and the flavors of honey and apricots made it worth it!”

The couple has a very symbiotic partnership. “Bill is in charge of production, and he likes the opportunity to be creative. When he decided to make wine, he didn’t want to do yet another Cabernet. So he has specialized in ports, and now our almost-vinegars. I am the ‘official’ taster. I love to cook, talk about food, and think about flavor. I enjoy talking to people in our tasting room.”
